Making homemade pesto was super easy.
Ingredients
1 Bunch of basil, picked & washed & sliced into 1cm strips
1 small clove of garlic
30 pine nuts
10 cashew nuts
Pinch of salt
Olive oil - Best quality you can get

Place salt, basil, pine nuts (keep them raw as they make the pesto ‘creamy’), cashew nuts & garlic into a mortar and pestle and bash it up. It will take some time to turn into a paste but its worth it.
Transfer it to a bowl and almost cover the paste almost oil olive then mix in. It seems excessive but his will flavour the oil.
Marinate chicken in the pesto which I then fried in pan (no additional oil was needed) or try it on some white fish and bake it.

I am going to be starting a strict paleo diet to help with my MS (auto-immune disease), and although I thought it to be torture to cut out dairy, pasta and basically everything I love out of my diet, your meals look delicious. Maybe going paleo won't be so bad after all!

Set your self a goal, mine was 30 days and I succeeded.
